was remade The Jazz Singer (1980) - IMDb at a time when few people knew it was a remake. That's a good time to remake a movie....when no one remembers the original or would go to the movies to see it.
Father of the Bride was a remake, though I didn't know it at the time. I eventually watched the original, which was pretty good but more like a play than a movie. The remake was better in my opinion.

Why would anyone care?

I think the remake of The Shining sucked, but it doesn't change the greatness of the original one iota (and I only watched the remake because I was more or less a captive audience - had I not been somewhere where it was on TV and when I had nothing better to do, I would have simply never watched it).

One of my favorite films, The Lion in Winter, was remade. Why would I care? I won't bother to see the remake, but I could not possibly care any less that it exists. Its existence certainly does not bother me.

Let them remake Blade Runner, The Graduate, Five Easy Pieces, The Big Lebowski, Apocalypse Now, The Seventh Seal - it's no skin off my nose.

What is the point of a remake anyway?

I'm going to agree with this take. Remakes smell of scratching for original ideas. True Grit was one I think they should have left alone. Though the girl who played Mattie Ross did a very good job of it I must admit.
