I'm am not sure how many examples are out there, but I think all musicans are inspired by Classical works and the great composers whose names will live forever.

Lenny Kravitz - His father, who was also a jazz promoter, was friends with Duke Ellington, Sarah Vaughan, Count Basie, Ella Fitzgerald, Bobby Short, Miles Davis and other jazz greats. Ellington even played "Happy Birthday" for him one year when he was about 5.

At his mother's urging, Kravitz joined the California Boys Choir for three years, where he performed a classical repertoire, and sang with the Metropolitan Opera. He performed in Mahler's Third Symphony at the Hollywood Bowl.

Alicia Keys - At age seven, Keys began to play classical music on the piano. She attended Professional Performing Arts School and graduated at 16 as valedictorian. She later attended Columbia University before dropping out to pursue her music career. Keys released her debut album with J Records, Songs in A Minor, which was a commercial success, selling over 12 million copies worldwide.

Possibly the first is more a jazz musician doing classical music.

YouTube - ‪Miles Davis - Concierto de Aranjuez (1/2)‬‏ - Miles's classical-influenced album.

YouTube - ‪Eric Carmen "All By MySelf"‬‏ - Apparently based in a Rachmaninoff piano concerto.

YouTube - ‪Tori Amos - Yes, Anastasia‬‏ - I don't know if it's based in any specific piece, but I think it's classical-influenced.
