Since my husband and I moved here we have enjoyed (some times too much) trying southern cooking. I have fallen in love with the corn pudding that is served at Monell's and would love to make it or something close at home.

We tried a recipe at Christmas that uses a box of jiffy cornbread mix along with canned and creamed corn, an egg and onion but it comes out pretty set like a corn bread.

Any cooks out there who can help us out? Did I just cook it too long? Am I missing other ingredients that would leave it a little soupy and loose like they serve at Monells?

Any help is always appreciated. Thanks neighbors.

You might have baked it a bit too long. I use a Jiffy cornbread recipe for corn pudding and it's perfect.

I have never eaten at Monells but I have a recipe similar to the one you mentioned. However, mine has one stick of butter, three eggs and and 8oz container of green onion dip (I am sure that sour cream or cream cheese would do, but the dip is delicious) but no onions. The name of this recipe is "Just Like Chi Chi's Corn Cakes". Don't know if that's true or not as I have never had them. I would bet you baked it a little too long. I have done that before myself.

This is a recipe I saw on Eat.Drink.Smile that is supposedly very good. I say "supposedly" because I tried to make it this past Christmas and I wasn't too impressed. It seemed sort of bland to me. Not sure if I missed a step or ingredient or what. I think it was probably "user error" but you never know.

Make sure the baking dish you're using isn't too shallow. My mom always made corn pudding in a large glass bowl that was pretty deep.

To be Southern, you need to learn to make grits. No need to get quick or instant grits if you know how to make oatmeal. Goes with almost any dish.

I respectfully disagree. I'm as Southern as one can get being born in Charleston, SC and raised here in Middle Tennessee and I can. not. stand. grits. Not with sugar, butter or even bacon. Yuck!

The consumption of sweet tea, however, is a requirement of inclusion into Southern society.

I'm not a huge grits fan either, but they're good every now and then. I especially like cheese grits...and especially especially jalapeno cheese grits.
