Pop-Up Restaurants and Stores (Franklin: neighborhood, live, trendy)

Pop-Up restaurants and stores are becoming very popular/trendy/successful in most large cities like New York and ATL. I've seen them in cities smaller, such as Tampa, also.
I was just reading in The City Paper about a meat-and-three cafe in Franklin being transformed into an Italian restaurant on Saturday nights (on a regular basis). Even though thar doesn't fit the "classic" definition of a pop-up (very-short lived, unannounced experiments testing the market/neighborhood with "trial runs", new concepts/menus/chefs, brands not found in the market, etc) often temporarily filling vacated spots or spots that aren't open during certain hours).
I was just wondering if anyone has witnessed/experienced pop-ups in Nashville and where? Are they non-existent, rare, or on-the-rise.
