Well, I'm not sure we can tell you which would be a better fit just from the information you gave.
Since you're going to be renting for now, I would probably suggest Hendersonville because it's a little closer to Nashville. For a while you will probably want to explore some of the things to do in and around Nashville, and living in Hendersonville would make it a little more convenient.
Be sure to take the kids to the Adventure Science Center, the Nashville Zoo, the kids art place at the Frist Center, Centennial Park, Bicentennial Mall, Cheekwood, a Sounds baseball game, and a few other family friendly attractions.
By the way, I work with a couple of guys who lmoved here after Katrina. At one time they were talking about starting a group of ex-Louisianians (just to get together and reminisce about home), but I don't think anything ever came of it.
