Thumbs up New Hampshire Cooks! Some NH recipes from NH people

A couple of people asked for the Whoopie Pie recipe, so here it is, with a little story My cookbooks are stashed away right now, so I actually had to go online for a recipe to make Whoopie Pies a few weeks ago, and I found an exact duplicate of my recipe on the Maine forum. Anyway, I printed it out and left it on my counter, and my mother in law saw it and wanted to know who gave me HER recipe LOL. Anyway, here is the "secret" Whoopie Pie recipe. Warning: these ain't health food!

Whoopie Pies

Pies:

1 cup shortening
2 cups sugar
3 eggs
1 cup hot water
1 cup sour milk (or buttermilk)

2 teaspoons baking soda
1 teaspoon baking powder
1 cup white flour
2/3 cup of cocoa (add water to cocoa)
1/2 teaspoon salt


Cooking Instructions:

Cream shortening and sugar, then add eggs. Sift soda, baking powder, salt, and flour together, add alternately with milk. Add cocoa mixture. Spoon by teaspoon or tablespoon (depending on how large you want them) onto a greased cookie sheet. Bake 400 degrees - about 8 minutes.


Filling:

2 egg whites
2 teaspoons vanilla
4 tablespoons flour
1 cup Crisco
4 cups Powdered sugar
4 tablespoons milk

Beat all together.
When pies are cool, spread a giant scoop of filling on a pie. Place another pie on top, and gently press together. You might want to wrap them individually to store, as they tend to stick to each other.

Enjoy!

You can also freeze Whoopie Pies and eat them later.

If you prefer a marshmallowy filling instead, try this:

Filling
1 cup solid vegetable shortening
1 1/2 cups powdered sugar
2 cups Marshmallow Fluff (or you can use marshmallow creme)
2 teaspoons vanilla extract

In a large bowl, combine egg whites, corn syrup and salt; beat with mixer in high speed for 10 minutes or until thick.
Add in sugar, beat on low speed until blended. Beat in vanilla until blended
*Note: Make sure you use light corn syrup, or the finished product will be an off-white color)

At specialty stores, I'm seeing all sorts of various whoopie pies: regular chocolate w/ raspberry filling, pumpkin w/ cream cheese filling, maple filling, etc. Anybody make these types of creations?

Sounds yummy Val, but you all still aint gettin my pumpkin spice whoopie pie recipe....hahaha. Good thread btw, maybe now lisa will get her pork pie (?) recipe.

Here is one of my classics- and I'll stick to something at least relatively healthy...Malaysian mango chicken! Yum...

1 lb boneless skinless chicken breasts (4 Breasts)
1 red pepper
1 yellow pepper
1 green pepper
3 green onions
2 mangoes
2/3 cup chicken stock
3 tablespoons sugar
2 tablespoons soya sauce
2 tablespoons rice vinegar or cider vinegar
4 teaspoons curry paste
4 teaspoons cornstarch
4 teaspoons vegetable oil
1 tablespoon minced gingerroot
1/4 cup cashews

MMMM.... whoopie pies. I just made some not long ago. I make the filling myself too and add some food coloring for the holiday them. Here in FL, not too many people have heard of them before unless of course you run into a New England snow bird.
