During the spring time we make a few gallons of maple syrup. The photo is of our evaporator that boils the maple sap.

actually I can't take the credit for it Dare2Dream said it - but glad to finally have the mystery solved. I never have seen that end of the operation, just the taps in the trees. Interesting hobby.
