Default Grill Season in NH

Yes, I know it's cold and windy today...but I started grilling last week (sporadically through winter as well) and haven't stopped since.

We LOVE food on the grill

Some of my favorite recent dishes:

Get a nice scale-on fillet of sockeye salmon...coat pink side thoroughly with normal mayonnaise...sprinkle lightly with fresh ground pepper...put on grill scales down over low heat- cook until fully cooked, remove skin before serving. The mayo (oil & egg) forms a barrier to prevent moisture from leaving the salmon on one side while the skin seers/prevents it from leaving on the other. You can brush off the mayo when your done cooking, or leave it on for a slight flavor.

Get 2 leeks, wash, remove any really tough/dried out parts & roots (don't go crazy, leave some of the "tougher" green tops)- slice in 3" sections and then down the middle. Toss in boiling water for a few minutes, check for firmness- once they are soft enough to eat (lose their toughness) drain & flush with cold water to stop cooking. Toss with olive oil & black pepper- then throw on grill (might need to use a vegetable grate so they don't fall through)...use tongs to flip around to get seared all over. Serve when they look good to you (not burned- just grill sear marks).

Finally...the key to good steaks is to use tongs to flip them...NOT a fork or anything that pierces them. Likewise for those nice criss-cross marks- pre-heat the grill to 700+ (all the way around on my Weber)...open and put steaks on grill fast/shut quickly; once temp gets back to 550 use tongs to turn steaks 45 degrees...flip & repeat based on how "done" you want the steaks. I season with fresh ground pepper and powdered garlic (just a dusting).

My goal is to get some "new" vegetable every week (something I've never made) and figure out how to grill it (hence the leeks).

I have about 20 duck breasts in the freezer that I kept specifically for the grill this summer. I'm just waiting for the first nice day......should come sometime in June.

HaVe you ever tried fruit on the grill? It is terrific.
Halve some peaches and slice up some pineapple, brush with a little butter and brown sugar mixed together and grill. Nice dessert after the rest of the bbq.

I agree- I love grilling too!. We love our Weber! We grill steaks, burgers, chicken, veggies and fruit. I love all veggies but I really loved grilled asparagus-yummy.

I love to make chicken quesadillas on the grill as well-yummy.

luvmylabs-I love pineapple on the grill-it is the only way that I really like it. I will have to give the peaches a try.

Wow- now I am in the mood for some fillets and asparagus for dinner tonight.

luvmylabs- I've done pineapple before- but never peaches. I will definately give that a try (big fan of peaches)! I'm wondering if I could make baked apples on the grill as well?!? I think you may have just trigged a whole new set of ideas...

nicolem- quesadillas, now that's an idea. I've been making them inside in the oven or on a pan. I imagine on the grill they'd taste a lot better- not to mention I could do all of the prep-work at the grill too.

Now if only it will warm up!

I'm a strictly charcoal guy, don't really know how to regulate the temp on a propane grill just yet.

Nothing like the taste of charcoal!

anybody ever try making a pizza on the grille?

they come out awesome:

1/4 a pizza dough, then spread it out. Place yur usual pizza fixin's on the dough. Place on a HOT grille. Takes about 5 minutes to great pizza.

All this talk of grilling makes me realize we never got our habacci out once all winter. Last year we grilled on it out on the porch at least once a week. I think it may have been the big snowfalls we had this year that prevented the 'urge' to grill. I am a charcoal person too. We have never had a gass grill. Favorite things for me are chicken and pork chops.

It gets a lot easier the more you use it. Also- you'll find that with good quality grills (Weber and the like) that they need to be used a few times (seasoned) before they become ideal for precision use.

I really need to get a smoker...

Been using nuthin' but coals for about 12 years...
I'm a weber kettle fan myself...
We've been cooking the Thanksgiving turkey and Christmas ham out on the grille for as long as I can remember. the turkeys come out incredible.
