I re read the OP and what she's looking for is "something along the lines of Metuchen" she just forgot the comma after that and it looks as though it's lumped in with Hoboken and JC, which she doesn't want.

Jabis, your budget is kind of on the low side but you can find what you are looking for in the Kendall Park section of South Brunswick, but you can't walk to any restaurants or bars. You could also find a home in Hightstown in your budget and it is a cute town that does have a walking downtown and a bar/pub/restaurant on a lake but the East Windsor school district is not so great. Compromise and choices is what it's all about good luck!

You can also look at parts of the Berdines Corners section of North Brunswick, near Georges Rd (Rt 171). You have Arthur's Steakhouse, Little Caesars, Subway, Krauszers and A&P shopping center all within walking distance. Just avoid anything too close to Livingston Ave. The closer you are to the New Brunswick border the sketchier it gets and some of those streets (Nassau, Hedges, Haverford etc) look pretty nasty along Livingston.

Chatham, Madison or Summit are great towns to raise a family and with prices how they are, this is a great time to get in! Of the three, Chatham is the better option.

Her budget is 200-250k Chatham, Madison and Summit might be a little out of her price range for a house.
