Red Bank is really your answer, OP. It is very close to some very nice beaches (quiet/clean), such as Sea Bright and Monmouth Beach. And Red Bank has some fun bars, some excellent restaurants, and great shopping.
If you are into outdoorsy stuff like kayaking and fishing, the Navesink River (which is a saltwater tidal estuary) is fantastic. Just really, really beautiful, and Red Bank sits right on it.
Recommendation: live right in downtown Red Bank, close to the train station. You can jump on a direct train to NYC and be able to walk to any bars/restaurants you wish. By the way, you are also close to a ferry that cruises to NYC. It's really a nice place to live.

I second the Red Bank vote but have to advise anyone interested in kayaking to not launch any where near Red Bank. Some areas (mostly between Coopers Bridge and Oceanic)have E coli counts as high as 43 CFUs and large amounts of PCPDEs/PCBs. If you want to kayak Sandy Hook Bay is only ten minutes down the road, and has a much shorter residence time (flush rate).
