I am accepting a job offer in Brooklyn, NYC (MetroTech) in the first week of October. I am moving from Central Virginia.

I am looking for an 1 Bedroom apartment in a safe neighborhood having families with young children. I am fine with a commute of 60-90 mins(door to door).

My budget for Rent + Utilities + Travel Expenses + Parking is around $1900-$2000 not exceeding $2200 if it's extremely good.

My top three important consideration are Safety, Family oriented & Bug free apartments. I will prefer apartment communities over private owners.

Would Woodbridge, Iselin, Edison, New Brunswick be good places to consider? Any help would be highly appreciated.

Woodbridge seems ideal for what you are looking for. Please note that Iselin is part of Woodbridge township as well. New Brunswick is a lot more college oriented and not so much family oriented in comparison. It is also a good deal for urban. Woodbridge also has a decent amount of apartment communities in your budget.
