Ok, I understand more what you're looking to do. So trust me on this one and skip New Brunswick. There's not a whole lot that would be worth stopping for. Princeton would be a great town for pedestrian wandering. The campus is also very pretty. If you happen to be in western NJ, there's a town on the other side of the Delaware River in PA called New Hope. It's a great little artsy community with interesting shops. I've probably lived in NJ too long and am somewhat jaded, but most of the nicer towns in NJ aren't what I'd think of as attractions. Sure, Summit, Montclair, Ridgewood and Morristown have nice walkable downtowns, I'd still hesitate to recommend them to anyone as a place to go out of there way to visit. Nothing against those towns, they're great, but it's not like going to Seattle or Portland you know?
