List three things that are important to you in order of importance
1. Safety
2. Easiest commute to UWS (I understand it won't be super easy)
3. Family Oriented/Easy Parking
There are some rentals available in Millburn and Maplewood (close to the train) in your price range. They're very safe areas. Commute to NY Penn can take as little as 35 minutes from Millburn or less, from Maplewood. I know you'd probably have to take a subway to the UWS, and I'm not sure how that would be.
I'll try to see if I can find some links to the apartments -- I found them on the MLS, but sometimes they're just not on external websites!
For a longer commute, you can also look at towns like Summit, Madison, Chatham Boro, New Providence, Long Hill, and Berkeley Heights. These towns all have direct access to NY Penn via train and are all very safe areas. Also, there may be towns that have an easier commute in Bergen County and surrounding areas, but I'm not too familiar with the area, and I'm sure if it's a good option, many other people will post.
2.5k is not a lot of budget for Hoboken for 2BR apartment. Definitely not getting a townhouse for 2.5k rental there. You need to look elsewhere.
As surprisingly as it may be, rental prices in towns like Hoboken and parts of Jersey City are not that much cheaper than Manhattan due to its proximity and ease of transportation into city.
Edit: Consider looking into Fort Lee. You have more choices there at 2.5k and some are even houses. While it won't be convienent, once you cross GW you are quite close to UWS whether it be by driving in or taking a bus across.
I agree that Hoboken may be hard on your budget. The places I mentioned are definitely much more suburban than what you're used to.
Do you plan on moving while you're pregnant? If so, is proximity to a hospital important to you?
