Are you referring to the Delaware & Raritan canal?
I live less than 1 mile from the canal, and while it is a bucolic and scenic place for my daily walks, there is not yet any color change in the trees. In a couple of weeks, that is likely to change, however.

The Delaware & Raritan Canal branches off from the Delaware River somewhere around Bull's Island, which is Southwest of Princeton. The canal goes right through Lambertville, which is a nice place to visit, and which is right on the river, so you can see both the river and the canal in Lambertville and vicinity. Just north of Lambertville is Stockton, which is a nice, scenic little town.
Then, continuing north, the area around Frenchtown is a nice place from which to view the Delaware River--from both sides. There is a free bridge that takes you over to the PA side, and the village of Frenchtown is cute.
Canal Road parallels the D&R Canal from The Georgetown-Franklin Turnpike north to the village of East Millstone, which is only about 10 miles. For much of its length, the canal isn't very close to any roads.
But, I would still suggest that you hold-off on local leaf peeping, as there really hasn't yet been any color change in this area.
