My husband and I have lived in Bayonne for our whole lives and we are tired of it. We are planning to purchase a home within the next two years -- we are thinking Sussex or maybe Passaic county (or anything you guys could suggest).

We are young - in our 20s and 30s, but we are homebodies who like to keep to ourselves - thus we like our privacy and don't want to be too close to neighbors. We don't have/want kids but we love our animals - we plan to have a couple dogs and maybe venture into farm animals further down the road. My husband works in Hudson/Bergen/Essex county so he would need to commute but doesn't mind a 1/1.5 hr drive. I'm a working artist who will need room for a separate studio structure on the property. Budget is around $600k, but we know we'll likely have to renovate to get what we want.

What are the best towns in Sussex/Passaic/elsewhere that you think would fit our needs?

Sussex and Warren counties are beautiful and for that price you got a big house and property however commute will be brutal and get old pretty quick. I would probably look into morris county but taxes might be high depends from town in Sussex maybe edge of Byram twp would fit your criteria

You don't have to go to Sussex to have what you're looking for. We are in Northwest Hunterdon which is a bit better of a commute depending on where exactly in those counties. Both my wife and I work locally now, but I did an hour+ commute south for a long time. It got old quick, but it helped me to focus my efforts on being able to find a way to make a living closer to home, which I did after 10 years and I couldn't be happier. I happened to be looking at comps the other day as we are in the middle of refinancing and $600K will buy quite a bit of house and land in this part of the county.
