Default cheesecake?

I looked into that a while ago and it appears it is illegal to sell baked goods that were made in your own kitchen. There must be some legitimate loophole. Insurance has to be out of sight for the seller.

It may depend on the town, but at the very least the kitchen needs to be inspected by the health dept.
