Subjective opinion only, but the proportion of asians in the Union county area (and slightly in somerset) drops compared to middlesex, so you will most likely not find the higher percentages you want and see in middlesex.

I believe it rises again northwards into upper essex county and bergen county.

For example, in bergen County:

Palisades Park has an extremely high korean concentration (37%), but seems to have a surprisingly low median household income

Alpine also has a high Korean population, about 20% or so for asians, and a very high household income.

Englewood Cliff has about 30% asian and a high median household income.

By comparison, Union county (and perhaps somerset) towns generally are low on asians...I know Cranford is only 2%, Westfield slightly better at 4-5%...all very low compared to middlesex or bergen areas.

Don't know why this is so....

Basking Ridge is a good choice, as well as Plainsboro. East Hanover has a lot of asians, chinese in particular.

Default ethnic or racial diversity?

Sounds like your looking for a racial enclave. Nothing wrong with that. Otherwise there is ethnic diversity every where and you would have trouble finding a place in NJ that is not ethnically diverse.
