Oh, and on a similar note, take notice of the Sonoran/Southern AZ style of flour tortilla preparation (affectionately referred to as the "sovaquero") compared to that of NM. A tortilla is a tortilla, right? Not for me!

My grandmother (en paz descansa) would curse you for that comment. Her food was NOT modified to appease anglo settlers, and to think that a Mexican would have invented this sort of cuisine is absurd. (Oh, and before you begin with the comment that NM hispanics are Mexicans, think again. The term "Mexican" refers to nationality, not culture. If you want to describe our culture, we are hispanic. As far as national affiliation goes, NM was part of Spain for ca. 350 years, Mexico for ca. 25 years, and the United States for ca. 160 years. Time-wise, we have been affiliated with two other countries longer than we were with Mexico, and not all hispanos here are keen on being referred to as Mexican. We are U.S. citizens with a long history here, and we're proud of it.)

Hmm...history of the Americas, eh? I have two advanced degrees. Want to guess what they are in? Anthropology (SW and Mesoamerican Archaeology) and Geography (my thesis was in prehistoric human locational behavior). The comment that Mexicans "invented" anything related to this thread is ridiculous if you purport to know anything about history, prehistory, and cultural evolution. Mexico, in and of itself, is a hodgepodge of indigenous cultures who are suffering and experiencing genocide in the south, and severe neglect in the north by upper class mestizos and caucasians. Just as my hispanic ancestors brutalized the indigenous peoples of this region, yours did the same down south. We took many of their customs and made them our own. Through assimilation and cultural evolution, cuisines have become variant, but they all share a common thread. That common thread can be traced to those who were here before.

So, unless you speak fluent Nahuatl, or are full-blooded Tarahumara, leave the elitist comments out of these forums. My wife is a pueblo indian from northern NM, and I wouldn't even consider forsaking my culture's debt to hers for its richness. Oh, and I asked her, and she thought that your reference to American Indians from NM liking Mexican food better than NM food was a hoot! What scientific survey was your source for that one?

Ah, and the reference to the modification of our food for "white men..." Well, as a hispanic, I have fair skin and green eyes. I would characterize my phenotype as being "white;" however, that, to me is irrelevant. Are you referring to non-hispanic caucasians? As you know, there are plenty of "white" folks in Mexico, and they're just as Mexican as the "non-whites." Wow, what a doozie.

You may think our food is bland and less spicy, but you lived in the midwest, are presumably from Mexico, and have come to NM as a tourist. OF COURSE you aren't going to experience our culture and our cuisine as it should be. I can't imagine going to see my friends in Chihuahua or Taxco and making them feel inferior because of their regional differences.

Also, as a presumed mexicano, you can also attest to the divisiveness that exists in Mexico between the north and the south, chilango and non-chilango. Please cease the ignorance, Tito. I can't believe another person like you has decided to move to Las Cruces. I detract my welcome.

Oh, and btw, your reference to cuisine related to "races" illustrates your lack of education in this topic. I don't wish to get into the biological reason that "race" is an invalid concept, but I would like to correct your reference to the more proper "cultures." Culture does not connote race. There is no such thing as a Mexican race, either. Genetically, mexicans are widely varied, as they are mixtures of different indigenous and european populations.

Neoazmn - Wonderfull rant. I could not agree more. We are ALL people and that is wonderfull.

I really liked the food when we visited NM and can't wait to get more.

Manny's (or at least it was Manny's three years ago) in San Antonio. San Antonio is 10 miles south of Socorro. Really good Gren Chillie hamburgers. Way better than the Owl.
