If Mercer is out of the way, do not consider Silver City. Your best option is going to be close to ABQ or Las Cruces. Towns in NM are alot further out than they are in Maine.
If you found Hallowell pricey, don't even consider Santa Fe.
NM can get cold, just not for long periods of time. The coldest I have seen so far at our place is -11; but I am 6500 ft above sea level. (Maine isn't as cold as people seem to think it is).
I would recommend checking out Las Cruces, as it seems to have all you require.

I lived several years near Bangor, 0 F during the winter was fairly normal, dipping down to -10 F or so now and then. The coast didn't seem to get that cold.
I remember waiting for the school bus at -30 F in Aroostook county. We would see days of -10 F up there.
It's been a struggle to rise above 0F this winter with the colder days maxing -22F. I'm done with that,. thank you
I'm hopefully planning a short visit in May. Flying into El Paso and driving the hour or so Las Cruces.
What should I be looking for?

My point was that many people think Maine is colder than Siberia, and its not. Yes, its cold; and they have had a brutal winter this year; but the weather has been crazy all over the country.
I know all about Maine's climate and one's desire to avoid another winter there. I was born there and lived there for over 50 yrs. Would I go back? Heck no.

Starting in Las Cruces I would suggest the White Sands National Monument and Carlsbad Caverns as well as the attractions around Alamogordo. If you have the time look around the small mountain towns in and near the Rio Grande Valley around Truth or Consequences.
