The World's Largest Matanza is a family friendly event put on by the Hispano Chamber of Valencia County. The annual event includes: Cooking competitions, live music, arts & crafts, kids events and all-you-can-eat food. The matanza is one of the oldest (if not the oldest) European traditions brought to the New World by Spanish conquistadors that's still practiced today. In Spanish, the matanza means "to kill" livestock. In this case more than 40 pigs are cooked by 25 teams who compete for trophies and bragging rights. Competitions include: carne adovada, liver and chicharrone. The public is also invited to submit their dishes in red chile, biscochito and tortilla competitions. About 20-thousand people attend each year making it the largest event in Valencia County. Proceeds benefit the chamber's scholarship fund. The World's Largest Matanza has raised more than $125-thousand and helped nearly 200 students meet their college financial needs.
