This is essentially the Three Guys from Miami Cuban Christmas pig roast in a much-reduced and more manageable scale. The garlic and citrus mojo is a thing of great beauty and makes pork incredibly delicious.

Your post made me laugh because I know the feeling. I had trouble finding decent pork steaks in Las Cruces. I can't imagine trying to find them in Alamogordo, much less a pork shoulder roast with skin on! I am not aware of a decent butcher shop here. We bought ground beef at Albertson's
once, didn't realize it was Halal approved until we got back home. It's funny that they had Halal beef from Australia, but basic pork steaks were no where to be found. And the butchers there didn't have a clue. Sam's Club is usually where we end up buying our meat.
