Nice to see Gustavo spending more time in the Land of Enchantment, I was a fan of his "Ask a Mexican" column. Disappointed to see him praise Pueblo chiles over New Mexico as being "consistently hotter", when there is a whole range of hotness in NM chiles. And while he visited an impressive number of joints in a short time, he still only scratched the surface of the local "chile scene."
That was a truly great, enjoyable read, and I can relate to it personally having been to 7 of those locations. The Colorado section was eye-opening and I hope to visit many of the locations.
The closest to me I have never been to but now want to go to is the Arrey Cafe. Sparky's has gotten the love, now it's time to try this place out.

I seldom go north of Santa Fe on I-25 but have a Colorado trip planned this summer so will keep this list. Especially interested in the Pueblo chiles. At the recommendation of a cousin, I ate at a Santiago's north of Denver and was pleased. The green chile was not especially flavorfull but you could choose from mild, medium, and hot. I tried the medium and the hot and it was very spicy which surprised me. Apparently Santiago's is a chain - order at the counter sort of hole in the wall.
Now if I could find an I-40 Chile Map for my trips to Texas and Arizona.

The Pueblo Chile Growers Association is a group of Farmers in Pueblo Colorado that grow the authentic Pueblo Chile. Their website is at: http://pueblochile.org/
Since the list includes a couple of Las Cruces sites, I think it a shame that it overlooks one of the best 5-star rated restaurants in New Mexico - Chope's Bar and Cafe in La Mesa. Their chile rellenos are to die for, IMO. Made with hatch chiles, natch!

I noticed that too! There are many varieties of chile grown in Hatch ranging in flavor from bland to bold and in spiciness from mild to scorching.

I was very pleased by it! Particularly because of some stuff I have been nearby that I have never heard of before, but now have every intention of trying. Besides the Arrey Cafe, I had never heard of the San Antonio Crane. Again, Buckhorn (now closed) and Owl Cafe get all the love in San Antonio. I have seen the Crane, but never considered dining there. After reading about their smoked open faced burger, I now wonder why this place was not considered an alternative to Buckhorn or Owl. No one in my circles ever talk about it, yet the article said the place was slammed when the author dined there.
