I agree with EP - seeing these pictures is torture to someone who lives half way across the country. Especially when they absolutely love New Mexican cuisine!
...but the pictures are so good that I can almost smell the chile - mmmm!

OMG!!! You all are KILLING me here! Just wait until I show DH those pictures - he LOVES carnitas! Can't get anything like that in Iowa, Vermont or New Hampshire!

Maybe you should learn to cook. Cooking is one of my hobbies and I know I could cook any of those recipes, anywhere, as long as I could purchase the ingredients. That's why cooking is such a fun hobby. And often you can even save money by cooking your own. In fact I think I'll dig up a recipe for carnitas and try them.
(Cooking enthusiasts see my profile for my recipe website. No carnitas there yet though. I do have several other Mexican recipes.)

Some pretty decent variation on New Mexican cooking can be found at La Casa del Warner in New Hampshire when I get around to making up some chili con carne, green chili cheeseburgers and/or burritos. Admittedly not authentic but pretty darn good nonetheless.

I love all the Mexican food of Southern New Mexico as the hotter the chile the better  . Way to go Hatch !!

Cooking my own is what I do most days....especially after the last lousy green chile burger at Blake's Lotta Burger. Sometimes they're great--and other times not fit to eat. The inconsistency is just crazy.
So....I just had a homemade green chile cheeseburger.....much better than what I can buy out.

Cathy ~ I hear ya!
All I have been able to do up to now is eat in restaurants when I am in New Mexico.
Now ... FINALLY ... I will be able to make green chile cheeseburgers .... and other stuff like green chile stew and posole and enchiladas AT HOME with fresh NM ingredients.
That is one of the things I am looking forward to the most.

It really makes a difference, too! What I was delighted to find in the freezer section was frozen posole...as well as frozen red (even my very favorite Chimayó) and green Bueno chile!
I can't grow Chimayó (or Dixon/Velarde) chilies down here very well...it's just too hot for those land races in the south. That variety was developed to be grown in the higher elevations of northern New Mexico...so I have to settle for getting the fresh red powder!
