Gorditas
Chyrel's Gorditas
Several recipes out there but I like this simple one.
Ingredients:
Filling:
1 pound ground beef
1 small onion, chopped
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon garlic salt
1/4 teaspoon chili powder
Shell:
2 cups masa harina
1 teaspoon baking powder
2 teaspoons salt
1 cup water
2 pieces bacon, fried and crumbled
2 tablespoons Longhorn cheese
Topping:
Shredded lettuce
Sliced or diced tomatoes
Shredded cheese
Method:
Fry beef and onion together. Season with salt, pepper, garlic salt and chili powder. While meat is cooking, mix with hands all ingredients for shells. Pinch off small portion of dough and roll into 2-inch ball. With quick patting motion, flatten out to 1/2 inch thickness and about 3 inches in diameter. Fry in hot grease until golden brown, turning once. Drain. Make a slit through the middle; open slightly like a taco shell and stuff with meat mixture, lettuce, tomatoes and cheese. Serve with favorite chili or taco sauce. You can fill it with whatever you prefer just added this filling because it is good and easy to make.

Green Chili Stew
Towanda - here's my receipe for Green Chili Stew
3 lbs lean pork cut into small cubes.
1 large onion chopped
4 garlic cloves chopped
1/4 cup olive oil
5 thin skinned potatoes (red or white) diced
12 to 15 large Hatch green chili's roasted and peeled (or you can use 20oz or so of the frozen one's but they tend to get mushy).
1 tsp of salt
1/2 tsp black pepper
8 cups water
Brown meat, garlic and onion in the oil in a large pot for 5 minutes. add diced potatoes and brown about 10 minutes longer, stirring frequently.
Drain excess fat off.
Add water chilis salt and pepper.
Bring to a boil, then turn down heat and simmer for 40-45 minutes.
Serve.
When I want a hotter/spicer smokey flavor I add 3 finely diced red chipolte peppers.

(I need to use canned green chile; that's all I can get in Kansas.  )
BUT .... when I am in Santa Fe, I make sure I get a bowl of green chile stew at Maria's Restaurant.
Now I can make my own!
