I still cannot wait to try it with Green Chile.

Hmmm, wonder what beef in red chile sauce as the base layer for the shepherd's pie would taste like??? I'm a fan of red with beef myself.

IIRC Juan Onate led an exploration/settlement expedition in NM from Mexico City in 1490 something.

As a variant on NM shepard's Pie try serving red or green chille in a hollowed out half loaf of round bread. Not only do you get to eat the chille you get to eat the bread soaked in chille sauce. Add a couple bottles of Mexican Beer and you are all set.
