A New Mexicans favorite Chile..
So the question is....
Chimayo Chile.. or Hatch Chile..?
I'm a hardcore norteno (Northern New Mexican) so we spell it with an E instead of an I...
Both claim to be the Chili capitals of the world.. so you tell us.

I live in the north eight miles from Chimayo but I gotta vote for Hatch.
Why? It tastes better. Why else?

Hatch was there when I needed green chile the most (while living in Houston), they have my vote.

I love everything about the northern New Mexico town of Chimayó and I go there frequently, but try as I might, I am not a red chile fan.
I had to go with Hatch.
P.S. I will say that comparing Chimayó chile (red) with Hatch (green) is like comparing apples and oranges, in my opinion.

Hatch chile for fresh green and fresh red......

Hatch green and red, although I get most of my chiles from Mesilla. And I certainly wouldn't refuse a Chimayo chile, if offered.

Chimayo, and I'm a red fan. I would not turn my nose up at any NM chile, though.
