Moving down to NOLA in the spring (sometime between january-april, depending on finances). Fiance wants to be a chef in his own restaurant eventually. He has been working in the restaurant industry for the past 7-8 and has done everything from food running, waiting, busing, expo, line cook, prep food, and has been even the chef when the head chef was sick for a couple of weeks. He wants to go to delgado in NOLA as they have a culinary program and it is not as expensive as some other schools around here. I believe it is a short program. Has anyone known someone/gone through this course themselves? Looking for opinions. He already has experience in the service industry but is looking for that extra something that will put him ahead of others. Thanks!

oh, wow! That would be awesome! Not only for people looking to get into culinary arts but also for the city itself! The city is known for food and should be recognized for that! A big school would be awesome and put them on the map to bring in outsiders

A good friend of mine went through the culinary program at Delgado. I believe they require you to have a job in a kitchen while going to school. My friend was a cook at the Hilton(before Katrina). He graduated and was promoted to chef and transferred to a Hyatt in North Carolina where he was given his own kitchen.
Even though Delgado is a community college, it's culinary school is very well respected. Many now well known Nola area chefs graduated from their program. I wouldn't hesitate to go there if I were interested in becoming a chef. The price can't be beat either. My friend the chef works with other cooks under him who hold degrees from Johnson and Wales and the Cordon Bleu. He's their boss with a degree from Delgado.
