The absolute best sandwich I ever had was in Jan. of 06' when SIL and her family moved in with us in the trailer. Arabi Food Store had just opened and as we took the first bites out of our potato po-boys, (dressed), her eyes welled up and she said, "it's worth coming back home just for this!" I haven't had a better sandwich since.
Next on my list would be Captain Sal's and then We Never Close oyster po-boys.

The Magazine St. Po Boy shop used to make the best fried chicken breast po boy you could imagine. Not sure if they still do.
Stein's is fabulous; reminds me of Philly (and they even have Tastykakes!!! ).
