Amtrak doesn't stop at 125th Street. Trains come out of Penn Station, not Grand Central.

There's actually a train that arrives precisely at 8:12 (leaves Harlem at 7:50), but that's obviously cutting it too close:

The train before that leaves Harlem at 7:26 and arrives at 7:48, but you'd have to leave early to catch that one.
If you can catch that same Amtrak train at Stamford, you can take the 7:47 Metro-North train from Harlem and arrive in Stamford at 8:21.
