For your original price of $2,500-$3,000K, you can definitely find a decent 1 bedroom with an elevator and near a plethora of food and shops. The areas of UWS, UES, Battery Park and Greenwich village are surrounded by a lot of food, restaurants, pharmacies (duane reade), bars, etc. You should try to come out to NYC for 4 days to check out all the areas and look at Apts.
If you can afford Manhattan then you should stay in Manhattan.
