Top of the Rock at Rockefeller Center (where you can see panoramic views of the city), as well as Rockefeller Center itself. Maybe a nice lunch/brunch somewhere (plenty of choices in this area). This is also where one of the morning shows is (The Today show, I think), and there's always lots of people around--they have live performances etc there in the morning. The skating rink is also open, and it's fun to see the skaters. Expect it to be crowded, though--but the earlier you get there the better, probably. But it's one of the biggest tourist attractions in town, and a nice area to walk around in--plenty of shopping, dining, etc etc.
The Circle Line is also nice. There's combo packages for 30 Rock and the Circle Line etc, but don't know if you'd have that much time, since even the shorter Circle Line is 2 hours, I think.
The famous Christmas tree in Rockefeller Center should be up, but it probably won't be lit til the end of November. I'm pretty sure the Rock Center area will have lots of Christmas ornamentation, although since it's before Thanksgiving I'm not sure how much or how elaborate. Some shop windows etc may have holiday decorations etc at this time. The ice skating rink will be open, and I'm sure there will be a nice holiday feel there.
