Ms. T -- they're going to ask for your Social (if I recall), and when you give in your bank statements, they often follow up by calling the bank itself to see if you haven't doctored your info. I wouldn't recommend blanking anything, accordingly. I know it's incredibly invasive, but those are the breaks.
Yes, you can not blank anything out. In fact, if your statement includes a blank page (usually marked, "This page intentionally left blank") you have include that too.

If they make you sign a 4506T form allowing them to get your tax transcript then they'll get it.
