Yes, you can. Some stores have mattresses laying down so you can try them.
The thing with Costco is that if you don't like the mattress anymore, you can return it. I returned my mattress after 4 years. Put the credit towards a new one.
We made an appointment and when we showed up he wasn't expecting us.
We asked about the different mattresses and he was about as disinterested in us as could be.
He talked about himself most of the time and never got up from his chair to even show us the different models. He just sat there and ate his lunch.
It was just plain weird! They are also no bargain.
We needed a bed ordered that day so we told him we were going to have some lunch and think about it. He just sat there and said OK. No follow up call, no interest at all. Never heard from him again.
We walked over to Macy's where we met with a very nice salesperson. They were having a sale (as usual) and we got a comfortable bed at a reasonable price. We live in a co op and there's all sorts of insurance forms needed for delivery but Macy's took care of everything and followed up to make sure the paperwork was done.
We like our new bed and the delivery guys were terrific.

Try doing that in a mattress store.
This doesn't seem to be the case. I contacted Costco customer service about trying out mattresses and this is their reply:

I went to Raymour and Flanigan. I wanted to pay a little more for quality. Most of the people I talked to said they were good quality and I wanted everything in a one-stop shop.
I have a Queen size bed. The mattress was $1200 but they lowered it to $1,000. Was a bit pricey, but I sleep so soundly and it's built really firm. Hopefully I won't have to buy another mattress for at least another 10 years. (5 years if I get married)

Reality is you pull it off the rack, lay it on the floor and try it out. They are wrapped in plastic so it's not the most comfy but worth a try for the low price.
Best part is that you can literally return it anytime. Weeks months or years later and you get 100% refund. No other store offers that. So it's worth a uhaul rental to bring home and try it out for a while. Even with a uhaul rental you are still ahead of the game.
Want a comfy store with lots of nice beds to lay on while they offer you coffee and BS you with high prices? That's up to you. Free country.

That's Sleepy's....name change. They're the mattress store equivalent of a shady car dealership.
I'm not in the market for a new mattress right now, but everyone I know who is seems to be shopping those new age foam mattress companies that will ship free and have crazy lifetime guarantees. They seem to be pretty happy so far, don't know about how they'll hold up over the years though.
I know. That’s where I got mine from. I picked what I wanted online, came to the showroom, layed down on it, and was sold. I tried a few more but the one I got was best. I knock out every night with no problems. Have had not one problem with my mattress. I got a ultra firm with somewhat of a cushion top. Best sleep ever.
I just get memory foam + pillow top mattresses from Amazon. $260ish for a Queen 6 inch medium density + 3 inch pillow top. I can't get used to people's spring mattresses anymore.
