The hardest part is figuring out what the ratio of sour cream, cream cheese, lemon, and sugar. Then properly timing cooling of the cheesecake is more important than baking. Anyone can bake but you have to know when to cool it down so it doesn't dry up and stay moist.
So, I don't think cheesecakes are that difficult and really cheap to make. And Junior's and other places charges you $20 for a small cake that looks like about 2 blocks of cream cheese.
