I can't believe I am the only New Yorker on this forum who meets white people all the time, who I assume are Italian or Jewish, who I then find out (only because they tell me) that they are Puerto Rican.

Yeah that rarely happens to me unless they're only half Puerto Rican. Even then, many half white/half PR mixes I know can't pass for white

Okay, I gotta say it: If (white) Puerto Ricans aren't "white", then this Eastern European Jewish gal isn't "white" either!

I have the same coloring (brunette, brown eyes, pale skin) as many of the Puerto Ricans that I meet.
And yes, my hair is wavy, but not curly or kinky.

Well as far as I know, you're of Ashkenazi descent which is Eastern European and not mixed with Subsaharan African like most Puerto Ricans are

Exactly, but I'm telling you: some of these Puerto Ricans that I know would not look at all out of place in my high school synagogue youth group!

That's why you notice they look like "Middle Eastern swarthy Arabs" (to quote you).

The other half of the Jews in Israel are descended from European Jews/Ashkenazi Jews who tend to be lighter-skinned, but not always (some European Jews are also relatively dark-skinned)

Israel is probably the diverse country in the world come it comes to race even thou it is not that religiously diverse. USA is probably the most diverse country in world if you factor in race and religion.
