If you use wood to heat your house, live where most people hunt, fish and otherwise have a totally non NYC based life, you are upstate.
The problem with this is that with the exception of the 'NYC based life', this does not describe the vast majority of Upstaters. There may be some counties in New York that could be described this way, but I have heard that much of upstate is not the same as late 19th century West Virginia.

agreed. Most people I know upstate don't hunt, fish or heat their homes with wood. Most people upstate live in urban areas.
I Agree! Areas like Mount Vernon, and Yonkers look alot like NYC, and are very urban, and are very close to the BX. So anything outlside those areas i would you say is upstate.
Upstate in my opinion is anything North of Haverstraw West of Hudson, and North of Peekskill east of hudson. Both are small urban cities/villages, and it gets noticeably more rural north.
We stayed in White Plains when we were house-hunting and moved to Pleasantville. I describe both as up-state as they are not NYC. But then to me Pleasantville is really rural ( I tell all my friends back in Asia that I now live in the countryside) so I guess my opinion doesn't mean much !!
You know this thread conclusively demonstrates at least one thing...
