Where are you coming from? Are you looking for places only in NYS and near NYC? If yes, suggest Beacon, Cold Spring, Nyack or New Paltz. In NJ, there's Princeton and Cape May, in CT, Newton or Kent and in PA, Jim Thorpe.
If you don't mind going further Upstate, then Ithaca, Corning, Skaneateles, Geneva, Saratoga Springs and Canandaigua are places you may want to look into.
