A visit to the Catskill Fly Fishing Museum just north of Livingston Manor in Sullivan County---- this also puts you near some trail heads for day hikes.

On the less traveled side of the Catskills Mine Kill State Park in Schoharie County has an Olympic sized pool set in a beautiful valley --- very nice setting. A 20 minute drive north will bring you to some incredible farm stands --- in early fall people might pickup a hundred pounds of produce.
