They could drive a short distance from Exit 45 to Bushnell's Basin, I usually stay in that area when in town. Safe at night.

After reading all of these responses, with most hotels being in the suburbs, you're still not 100% safe. I would venture to say that Woodcliff would be the most safe. I'm sure it's much more than you are looking for, but I just want to throw that out there. In fact, in general, the Victor area is safer than Henrietta and there are other hotels.

There are other restaurants nearby as well.
There is also a truck stop right by Exit 36, the interchange with I-81. There are some restaurants west of I-81, but the truck stop is east of 81.
I’ll add more later...
At Exit 38, there is a hotel(I believe a Motel 6) and if you go south of the Thruway, you would go into the village of Liverpool and a little further south is Destiny USA(the biggest shopping center in NY State/6th biggest in the country). There is a nice, new Embassy Suites across from the mall.
In between Exits 37(Electronics Parkway/Liverpool) and 36, there are multiple hotels on 7th North Street in that area west of I-81. There is a big Holiday Inn on Electronics Parkway that is right by Exit 37.
There is also Exit 35(East Syracuse/Thompson Road/Carrier Circle), which also has multiple hotels and some restaurants in the immediate area. Another Wegmans is located south of the Thruway down Thompson Road and take a left onto James Street. There is a Double Tree if you go east of the circle on Route 298, among others.
A wild card place to consider that is similar to leadfoot4’s suggestion is Exit 33(Verona/Rome), which is where Turning Stone Casino/Resort is located. It is in between Syracuse and Utica. So, that puts you a bit closer towards Boston.
