Question Salisbury, Dolgeville, Little Falls

I'm finding homes in my price range in these areas in what look like scenic settings, close to Adirondack Park but I don't know anything about these areas. From research I can see that the headspace and atmosphere I'm looking for is in Ithaca but I'm not finding any way to compare that with the areas above. I see a lot of promotion for hunting, fishing and trapping in this area which I am not a fan of, but I don't know how immersed in it I would be if I lived there. I'm looking for proximity to eco-friendly business, farms and humane type groups. Can anyone shed some light on this for me?

Thanks
