What is crazy is that the market for having such food options in the are is there, given the high Jewish student population at SU and the population on the city's outer East Side and into the eastern suburbs(Jamesville-DeWitt and Fayetteville-Manlius SD's in particular).
I also wonder if that percentage is for those that are practicing.
Ironically, most are not Upstate, but in NYC. So, in that sense, the attacks are more of an issue Downstate.

There has not been a full-time kosher restaurant in the Capital Region since Terra International Cuisine in Albany abandoned the concept in 2016 after 22 months because of lack of business.
In January, Morris Oiring bought the 135-room hotel at auction after it closed during the pandemic and was forceclosed on. He said Monday that the property recently underwent a $2.5 million renovation, including the addition of a pool. The restaurant has yet to be built within the hotel, which previously did not have one. In a best-case scenario, the restaurant could be unveiled by midsummer, Oiring said. The hotel is currently open and offers a kosher breakfast buffet, later to expand to a-la-carte items, with dairy fare produced in a separate kitchen from the kitchen or kitchens to be used by the restaurant and event spaces, Oiring said.
He said he is in negotiations with a multistate restaurant operator to run the dining program at the hotel but has not finalized the deal. If it were to fall through, he said he would remain committed to having a kosher restaurant to cater to members of the state Legislature and other populations who keep kosher and have few dine-in options locally. The so-called kosher Price Chopper in Colonie offers kosher food and prepared meals, and catering companies including 518 Kosher, an affiliate of the non-kosher Iron Works Grill in Troy, prepare holiday meals for area temples, but there are no dedicated restaurants open to the general public.
“We really see a need for this,” Oiring said. In addition to the restaurant, he said the hotel will emphasize wellness options and a program of live music that he sees as complementary to the redevelopment of that area of downtown, centered on a proposed $81 million transit center that would replace an existing bus station in what has long been derided as the “parking lot district” and is being repositioned under the name Liberty Park."
