The G is a compact car, based on the z chassis and powertrain. It is RWD, handles well, and is nicely finished inside though it isn't quite as "premium" as it could be. Very good car, very popular, and a reasonable alternative to the BMW 3 for many.
The M is RWD also, but I don't know what chassis it is based on. No US Nissan shares the platform. The M is a mid-size, very nicely finished, and comfortable. It rides firmer, and handles better than the Lexus GS.

The M uses the same FM platform as the G. That same platform also underpins the FX, EX and Nissan Z. Basically, everything Infiniti builds with the exception of the QX (based on the Titan/Pathfinder/Aramada) is based on the same platform, just in different flavors.
As far as the differences go, most hit it head on. The G is smaller and tuned more sporting to compete with the 3-series. The M is larger and tuned softer and offers higher quality materials to compete with the 5-series.
G is being replaced next year... the M got way better when they redid that car a few years ago, expect the same for the new G.
