I'd wager that there wouldn't be a heavy sweet potato taste. Fullsteam Brewery uses sweet potatoes to brew their Carver Lager and while there's a *slight* sweetness, it doesn't taste like sweet potatoes to me, and I HATE the taste of sweet potatoes.

I wondered that myself. I wonder if they're using the white sweet potatoes. They're less sweet.

^ Don't know for sure, but I'd guess they're using the regular orange-ish sweet potatoes. For one, you don't see a lot of white ones so there wouldn't be as many leftovers available, and secondly, a higher sugar content yields a higher alcohol content. Sounds interesting either way...if anyone finds out where this stuff can be bought, please post.

Good point. I love the orange ones & the white ones. I'm not too fond of the yellow ones, though. In fact, I don't know anyone who is all that crazy about the yellow ones. I'd think that those might be good candidates to be left-overs.

Well, this is an interesting conversation. Turns out I discovered something I had never read about - we have a Sweet Potato Commission in this state. And sweet potatoes are a huge crop here - NC produces the most of any state in the union.
