As a NYer living in Houston (and having eaten various local versions of pizza in different states and towns), I've come to understand why folding a slice (as we NYers often do when we eat pizza) is its own 'advertisement'. When I was younger, I'd do it, enjoyed eating it, etc, but never gave it any thought. Now I understand, after observing people and tasting pizza in other places. First, it shows the crust is firm and crunchy as opposed to doughy and airy (like domino's), yet is moist. The crust should be crispy, not crackly (like pizza hut's cardboard version). I guess if you fold it and it breaks in two, the crust is crappy and crackly (too dry). If the 'crease' tends to bounce back, albeit slowly, then it's doughy and, thus, not good. A good slice  should fold, crease, stay firm, yet not fall apart and not crackle to bits. The second reason is PROBABLY (I don't know how it got started as a NY habit) because folding it lets the slice get eaten faster (and it does taste good that way too), and keeps some of the hot cheese in---both reasons PROBABLY stemming from NYers wanting to eat while walking. BTW, a good pizza also has good mozzarella (and the right amount, neither too much making it clumpy, nor too little--no point there) AND good sauce, water, and stretched, flipped, etc. And if my slice is good (usually, I can tell if it's good by looking at it and smelling it), i'll eat it both folded or open-faced--both have their good-taste points. Unfortunately, most Americans will eat (and enjoy) anything that's called "pizza" (not to mean that if it ain't NY style, it ain't good), but most people (non-NYers/NEers) will crave the doughy or crackly kind, clumped, over-(or under-) sauced, thick, airy type, fried-looking crap, load it with all kinds of nonsense, and say they had good pizza  . Of the non-NY/NJ/NE-styles I've had in various states (meaning locally-styled), the best ones (for me) were some in California, one in Oregon, a couple in Texas, a few in Florida, and one in Illinois). The common denominator with all those places was the ingredients--fresh, well-cooked, not exaggerated. However, one place in California was raved about by locals as 'the real deal' made by real NYers. We went, and I found the sauce way too spicy (and too much of it to begin with), and barely any cheese. The crust was thin, but a bit too crackly. Still, it was homemade, and it was still better than pizza hut's or godfather's or domino's or izzey's cr*p. But it wasn't anything to write home about, especially to another NYer, cause it didn't taste very "NYish" to me. My point being that most of the ravers of this restaurant were local Californians who had grown up on your pizza hut and domino crud. Other people may rave about another place (say, a local-styled pizza place), but I found the pizza (with no slices sold separately either) to be over-cheesed, so much so that most of the cheese falls out in one fell clump. Yet, the locals love it  . Anyway, back to folding, those are probably why NYers/NJians/NEers fold their slices. BTW, real Italian pizza (i.e. made in Italy) is different than NY/NE pizza---different but still delicious  . I wonder what they must think of our general American pizza  .

....er, don't generalize. Alot of Yankees enjoy other places and the local stuff. It's THIS guy who is rude, crass, a belly-acher, and a loud-mouth (who also generalizes). That one needs to drive around the state of NC and taste and enjoy home-down southern cooking (I have, love it) instead of being so ignorant and rude. He makes us NYers look bad (but I know of so many other ppl who make x,y,z place look bad too). I've been to the Triangle and to Charlotte. I've eaten good local food there, and enjoy NCians too (except rednecks and hicks). But upstate NY has hicks and arrogants too. And NYC itself has its share of 'trash' too. But, yeah, it's also the pizza. Nonetheless, this guy (and others like him from wherever) need to chill and enjoy their new environment, while still missing their own stuff from back home.
