NC laws on medium-rare hamburgers?
Are we allowed to have medium rare burgers here in NC? Each time I go to Stonewood, I get a different answer - but sometimes they'll make it for me and other times they say they can't.
What are the rules here?

For a definitive answer, probably check with the health department. The restuarants themselves night not actually know!

I had a medium burger the other day. Definitely some pink left in it. I was asked how I wanted it cooked and they got it right.

The rule is the restaurant has to grind its own meat to serve it pink.

NC Department of Environment and Natural Resources rule 15A NCAC 18A .2609(e) requires ground beef to be cooked to an internal temperature of 155°F.

What does that translate into as far as having a "cool pink" or "warm pink" center etc.?

It doesn't really translate by color, that is, color isn't a great indicator of doneness which is why they regulate it by temp. Most places I've looked would call 155 "medium well."

My wife orders her burgers medium rare just about everywhere we go, and I can't recall a single restaurant that questioned her order.

Last week we went to East Coast Wings, and they wouldn't serve a burger unless it was well done.
