Mustard BBQ is only used in a small part of SC, mainly around metro Columbia and metro Charleston. Great on pork tenderloin, good with smoked chicken, mediocre on chopped bbq. Literally everyone I know in SC uses vinegar-based BBQ sauce, I've always found it odd that people associate SC with that mustard and NC with vinegar.

Just based on my life's BBQ-eating experience, I believe that NC-vinegar usually has some sweet ingredient in it, and SC-vinegar tends to be much hotter with more cayenne pepper. Hard to say, there are so many variations. I guess more testing and research is needed!

I haven't eaten any barbecue yet.** In any event, Greenville is a great town, thank you very much! And even has (gasp!) culture.

We can spell correctly in SC, too.


** We just bought a home and are getting ready to move. The president of our POA owns and runs a nearby barbecue restaurant. I'll definitely check it out. And adding to rubber_factory's comments, my hubby eats more "cue" than I do... he hasn't said a thing about encountering mustard-based sauce here in Greenville.
