Here's a pic of the historical mill tower in McAdenville on March 2, 2009 after a snow storm.

What strikes me is the northern vegetation and northern general atmosphere at such southern latitudes (upper 30's) , NC is at the same latitude as Southern Spain and Portugal, would you believe it ?

Generally speaking, nearly any time during the week is less crowded. Leaf peak is obviously the most crowded with summer time in a close second. The popular spots along the Parkway (Graveyard fields, et al) get pretty busy, especially the easily accessible spots. For me, anytime is a good time to visit the mountains, so to avoid crowds, I'll go during the non-peak times of winter and even early spring. In my opinion, spring time is just as magnificent as fall with the color and life coming back into the foliage.
If I had to pin a specific time frame that had all the pieces lining up for a good mountain trip, I'd say right about this exact time (September) is really good. Folks are waiting for leaf color to show before pilgrimaging up there, the weather is beginning to tone down from the hest of summer, and it's technically the driest month of the year (doesn't mean you can't get socked in with clouds though!).

Seafood Festival
Maybe NOT spectacular, but for us swimming in the Atlantic on October 4 was great! So was Morehead City and the NC Seafood Festival.
