Only know Hickory from the perspective of a college undergrad but... it's less boring than other parts of NC. The shopping is the same as other places and you can always drive to Winston Salem/Greensboro/Charlotte for things that aren't located right in town. There are plenty of chain restaurants (many of which are the same you'd find in Charlotte).

I used to commute 3 hrs a day... and even so, I doubt I'd make a Hickory to Charlotte commute. That just seems inefficient given the resources available in Hickory.

Good luck with your visit.

Minier is on a distinguished road
You really need to go to the interview and look around town. Just because they offer the job doesn't mean you have to take it, but at least you'd be making an informed decision rather than avoiding even the interview based on opinions on a forum.

It's different if you were doing general research, but if you actually have a job opportunity in that location, you should go look.
