Default young family wanting to move to rural NC

My young family of 4 (with a 5th on the way) is interested in moving to NC from AZ. We're interested in a small to medium sized town with a sense of community, change of seasons a must, large home regardless of build date, large yard so we're not looking out our kitchen window into someone else's window like most suburbia, no "cookie-cutter" housing, prefer nature playing a large role in local scenery instead of concrete & buildings, good schools and arts programs, family environment, don't care about night life or partying, little traffic, and a decent variety of hospitals within 20 minutes or so for my RN wife to work at...Any suggestions? We're open to anywhere in the state at this point...

Mountain area? Trees and seasons. Though there are lots of trees here in Zebulon. Are you looking for SNOW or just the seasonal cycle of trees changing? If so I believe that is anywhere in NC (except may be as you get closer to the coast?)
