PLEASE ADD MORE FAIRS/FUN INFORMATION in this post for 2011 please.
Shawnee Mountain also has tons of fairs around the year... however... their fairs are a bit too commercialized and $$$$ for my personal taste (Entry, food, drink for family of 4 can easily be $120+)... not to mention that they are same old same old ---- does not really matter what the title of the fair is...

Greene Dreher Sterling Fair

The Greene Dreher Sterling Fair - or GDS Fair - began 94 years ago when Ella Nevin, a schoolteacher, started displaying her students' handywork in an old community hall in Newfoundland. Through the years the GDS fair has grown as it moved from the community hall to the Newfoundland school and eventually to the Newfoundland fairgrounds. The fair was open only to residents of Greene, Dreher, Sterling and Lehigh, but later became open to all of Pennsylvania. Today the GDS fair consists of 4H and agricultural exhibits, along with midway carnival rides, games and entertainment. The GDS Fair of 2011 will be held from August 30th through September 5th. The $5 admission covers exhibits, all musical shows, most arena events and all the rides. There is an extra $5 charge for Friday, Saturday, Sunday and Monday Truck Pulls and Demo Derby. Parking and shuttle service from parking lot to fairgrounds is free.
Wayne County Fair

In 2011, The Wayne County Fair celebrates its 149th year when it comes to the Wayne County Fairgrounds on Route 191 in Honesdale, PA. Wayne County Fair dates are August 5th through August 13th. Sponsored by the Wayne County Cooperative Agricultural Society the fair features games, rides, food, exhibits, farm animals, thrill shows and live entertainment. Schedules and admission prices have not been announced as of this writing, but check the Wayne County Fair's website for upcoming information at Welcome to the Wayne County Fair.

Carbon County Fair

The Carbon County Fair takes place every August at 3285 Little Gap Road in Palmerton, PA. In 2011, this fair will be held from August 10th through August 14th. The Carbon County Fair features a variety of agricultural exhibits, carnival rides and entertainment. Free parking, music and midway rides are included with the admission fee. Daily ride specials, children 10 and under are free. The fair will be held August 10-14, 2011 from 3-11pm daily. For more information, visit the website at Carbon County Fair.

West End Fair

The 90th Annual West End Fair will take place from August 30th through September 5th of 2011. A country fair with animals, homemade and home grown exhibits this fair in Monroe County also includes carnival style rides, amusements and entertainment. Some attractions include wood carving diplays, antique tractors and toy steam engines. Located on the fairgrounds in Gilbert, PA. Northeast Fair

This Lackawanna County Fair takes place from June 21st through June 26th of 2011. According to their website, The Northeast Fair showcases "Agriculture, Horticulture, Home Arts, Home Gardening, Entertainment, Food, Fun and More!" This fair also features concerts, motor sports, family shows and midway rides and entertainment. Fair admission is $6 in advance or $9 at the gate. Fair admission includes everything from parking to entertainment and rides. The Northeast Fair is located just off of Route 315, Suscon Road, Pittston Township, PA. I've heard the GDS fair is a good one. Haven't made it there...yet. The Wayne County Fair IS a good one. Awesome prices, enough to keep kids busy for a at least a day if you live close enough and can afford to go more than once.
